A saucier is not a saucepan. The difference is in the base — where a saucepan has straight sides meeting the base at a sharp angle, a saucier curves continuously from base to rim. That curve means a whisk or spoon reaches every part of the pan without leaving dead corners where sauce catches and burns. It makes a practical difference every time you use it. Why I use it
This is the pan I use for risotto, pasta sauces, and anything that needs regular stirring and attention. The size is right for two to four servings — not so large that a small sauce disappears into it, not so small that you're watching it overflow. The curved base makes a genuine difference when you're moving a spoon constantly through a risotto or emulsifying a pan sauce. The flat handle is something I didn't think about until I'd used pans without it — a rounded handle rotates in the hand under the weight of a full pan, and pouring becomes a two-handed job you're fighting rather than controlling. This one stays exactly where you put it. It also comes with a lid, which cheaper sauciers often don't include.
